What you’ll need
1 chicken breast cut into cubes
4 tbsp. pesto (any kind will work, i’ll post a recipe someday)
Grilled onions, zucchini, and red pepper
1 tomato basil wrap
Salt & pepper
One of my favorite things to make is pizza on a wrap. It’s healthy, quick, and easy to make. Today at work, all I wanted to do was make a nice little pizza for myself but my friend Tyler decided to turn it into a little contest: who could make the better quick pesto chicken dish. He was in the sandwich mood and was feeling pizza at the time.
First, Heat your oven to 450 degrees and place your wrap in between 2 sheet pans (to prevent it from puffing up), and cook for 10 minutes or until it’s crunchy. After it’s crunchy, spread 2 tbsp. of pesto on the wrap.
Next toss your chicken in 1 tbsp. of pesto and add it along with the pesto, grilled veggies, and cheese to the wrap. Bake for another 10 minutes, be sure to keep an eye on it to make sure the crust doesn’t burn.
Tyler’s approach was to make a sandwich. Same exactly ingredients but he threw it all on a ciabatta roll and baked it.
After the dust settled in kitchen stadium, I present you with the finished products:
