Garlic and panko crusted cod – nice and flaky with an awesome roasted garlic crunch. I sauteed 5 garlic cloves in about 3 tablespoons of Kerrygold butter, added some extra virgin olive oil and then mixed in panko breadcrumbs. Dredge the fish in egg and cover in panko mixture.
