Otherwise they just spread around and are harder to control, in my experience. High quality offsets cost much more than the Char Griller. But a modded Char Griller can easily compete even with more expensive models.

It will just be a bit trickier to keep in the right temp range and cook evenly. Some modifications are super easy, like flipping the charcoal tray. That makes one of of the biggest impacts also!
